Entropy Cellars Wines
2014 Cabernet Sauvignon Reserve

Rich ruby color. Begins with a touch of caramel followed with perfectly ripe fruit featuring cherry and blackberry with hints of tobacco and oak tones from start to a long satisfying finish. A beautiful cab. Aged in French and American oak. 91 points Wine Enthusiast, Silver 2018 SF Chronicle.
2015 Syzygy

Syzygy is the alignment of three celestial bodies. Here the stars are the three bordeaux varietals: cabernet sauvignon, merlot, and petit verdot. Perfectly aligned in a classic style with new world excitement. Appealing nose promising rich fruit highlighted by bright cherry and plum flavors that last. Perfectly balanced fruit and tannins. Aged in French and American oak. 90 points Wine Enthusiast and Gold 2017 SF Chronicle.
2016 Cabernet Sauvignon Reserve

The same top quality cab you’ve come to expect. Predominantly cab with just the right amount of merlot and petit verdot to provide the medium to dark fruit combined with the modest tannins. Aged in American and French oak for 28 months. Will just get better. 90 points Wine Enthusiast, Gold 2019 SF Chronicle and Silver at Livermore Uncorked.
2016 Merlot

Superb merlot featuring a beautiful fruit profile with depth and richness. Perfectly oaked with a lovely finish. Gold 2019 SF Chronicle.
2017 Merlot

2017 Merlot, Livermore. Again these two barrels were so good I just had to bottle it as merlot. Rich and luscious with the perfect amount of oak. Dark fruit with cassis, dark cherry, berry. A medium to long finish. Gold SF Chronicle 2020. Silver in Uncorked.
Shred Red–NV Blend

This is a superb blend of Cabernet Sauvignon, Syrah, and Petit Verdot. All are 2016 vintages from Livermore and aged in a mix of the finest American and French Oak barrels.
It features a lovely nose and concentrated, intense fruit without being jammy or over ripe. It has integrated well and has fine grained tannins for a very nice, medium long finish. An excellent table wine. Bronze 2018 & Gold 2020 SF Chronicle.
2014 Chardonnay–Sold out

This chardonnay was aged in Acacia and oak barrels. The acacia brings out more tropic fruit notes and tones down the still present oak ending up in a smooth and balanced wine. Crisp and lovely with notes of honeysuckle and melon, and a bit of grapefruit.
2019 Sauvignon Blanc–Sold out

Crisp, clean, with tropical fruit. Hints of citrus, honeysuckle, and melon. A bit more depth than typical, while keeping the crisp nature of the varietal.
FUSION LOT 8–Sold out

The seventh lot of Fusion. A fantastic blend of zinfandel, syrah, petit verdot and grenache. Perfectly blended with just the right amount of oak. Great fruit without being over ripe. The flavors continue through to a long finish.
Shred White lot 1

Shred White is our table white. Great for those days on the back porch or after a day on the water! Lot 1 is primarily Sauvignon Blanc.
